Grand Traverse Resort welcomes Guillermo Valencia

ACME — The 900-acre Grand Traverse Resort & Spa near Traverse City is pleased to announce the appointment of Chef Guillermo Valencia to the position of Executive Chef.

Chef Valencia has a passion for food and excels in contemporary American regional and European cuisine using seasonal ingredients. His cuisine reflects a new Latin Fusion focus.

Said Chef Valencia, "I am truly excited about using the local ingredients found in Michigan, including produce, fish, and wine from the Grand Traverse region, a wonderful area for fresh and healthy food."

Chef Valencia comes to the Resort most recently from the Oceania Club in Miami, FL where he was Executive Chef.  He began his culinary career at the age of 18 at an Italian café in Barcelona, Spain, his hometown.  He furthered his culinary experience and training in Madrid, in London, and in France. He moved to the United States and became part of the culinary team serving at The White House under Presidents Nixon, Reagan, and George HW Bush.  Chef Valencia received a medallion from President Bush.

Chef Valencia was inducted into the European Academy of Chefs in 1979 and was named South Florida Regional Chef of the Year in 1992. He is a Certified Executive Chef by the American Culinary Federation.

* Corp Executive Chef/F&B Director at the Four Seasons by Sheraton, Miami, FL

* Executive Chef at the Lancaster Hotel, London, England

* Executive Banquet Chef/Garde Mange Chef at The White House, Washington, D.C.

* Garde Manger Chef for Scandinavian Cruise Lines

Chef Valencia holds degrees and certificates from several institutions of higher education, including a Bachelor of Arts degree from the Real Academy of Art, in Madrid.
